Every few months, the original Malaysian stall owners would come to Singapore to audit the food.The <strong>design<\/strong> of the food court is like 60s Singapore, complete with songs from the 60s! Imported from Ireland, all ducks are handled by hand, not machines, so that they are not bruised. They are fed on a natural diet, no GMO food, and thus, have lesser saturated fat than other ducks. Like HK noodles,\u00a0this one\u00a0had an alkaline taste. A trick Hongkongers use is to dip the noodles in red vinegar, like tsukemen dipping ramen, and wash away the alkaline.
