Using Italian flour, the 10-inch pizzas are baked twice: they are first par-baked in the wood-fired oven, so that when the ingredients are placed on top and baked the second time, the crust won&#8217;t be soggy. The <strong>aubergine pizza <\/strong> has lovely light flavors, but an indecisive crust, in between crispy and fluffy. I wish they could go one way or the other. My favorite is the <strong>lemon tart<\/strong> and I always buy the <strong>cinnamon roll <\/strong> ($4.50) home. That day, we had a delicious <strong>carrot cake<\/strong> ($7.50), full of bits of textures and a light cream cheese.
