There are two important changes: firstly, the buffet has gone hipster. They now have an extensive superfood salad bar<\/strong> with 8\u00a0different homemade dressings. And they even have protein shakes<\/strong>! Whey protein is added to juices. Or if you don’t want muscles, how about antioxidants? Chia seeds and Jarrah honey added to yogurt. Welcome to the 21st century!<\/p>\n

\"oscars-conrad-champagne-brunch-price\"The second overhaul is that instead of serving the food a la minute<\/em>, Oscar’s expands the food selection. Since the menu expanded, it is not possible to cook the food a la minute<\/em>. However, some dishes, such as organic\u00a0pasta, Asian noodles,<\/strong> crepe suzette<\/strong>,\u00a0and foie gras, unlimited foie gras<\/strong>, are still cooked on the spot, upon ordering.<\/p>\n

\"oscars-conrad-singapore-buffet\"The major sections include: cheeses and cold seafood (Boston lobsters<\/strong>, Mont Saint Michel oysters<\/strong>, etc); Japanese sushi and sashimi (including my favorite swordfish sashimi<\/strong>); superfood salad bar; roast meats (suckling pig<\/strong>,\u00a0London fat duck<\/strong>,\u00a0roast beef<\/strong>); Asian cooked food (mostly Indian curried meats, and a Chinese\u00a0vinegared pork trotters<\/strong>, and\u00a0crabs<\/strong>); Western cooked food (like\u00a0sous vide pork belly<\/strong> and\u00a0chicken\u00a0<\/strong>fricassee<\/b>); and desserts (such as nitrogen ice cream<\/strong>).<\/p>\n

\"oscars-conrad-sg\"First, the good things: the superfood salad bar<\/strong> is good. Swordfish sashimi<\/strong> is a surprise. Suckling pig<\/strong>‘s skin is crispy and meat is moist. London fat duck<\/strong> is everyone’s favorite. The\u00a0poached egg<\/strong>\u00a0with spinach in truffle-foie gras espuma<\/strong>\u00a0(above) is fantastic, like a carb-less egg benedict.<\/p>\n

\"oscars-conrad-singapore-champagne-buffet\"Then there are some areas to improve: the crabs and prawns<\/strong> are limp and flat, almost mash-like, indicating they are not fresh. The foie gras<\/strong> is overcooked, hardened.\u00a0The Indian food<\/strong> doesn’t have enough spices. The Asian noodles<\/strong> are placed outside the restaurant; some signs will be good.\u00a0The \u00a0desserts<\/strong>\u00a0are monotonusly sweet, hard to differentiate the flavors, except for a light matcha tofu<\/strong>, and a\u00a0Mont Blanc tart.<\/strong><\/p>\n

I’d like to see more focus. And from some of the delicious food, I know Oscar’s can do better.<\/p>\n
