Fine Dining I’ve Been For the Past Year Part 1: 5 on 25 (Andaz); Bam! (Tras St); Bedrock Origin (Sentosa); Caviar (Palais Renaissance); and Guccio (Gemmill Lane)

As I am trying to get my groove back into blogging, I just want to document some of the fine dining places I’ve been for the past year. This entry is just a quick one paragraph to remind myself that I’ve been to these restaurants and for referencing.

Cantonese food. I’m impressed. The food was fantastic. Even the broccoli was mindblowing, had a nice texture that I couldn’t achieve in my own cooking. If you want the Peking duck, you need to pre-order it. It’s priced similarly to other fancy Chinese restaurants, tasted great, and the crepe was so thin. I also enjoyed the stir-fried black pepper duck, I usually don’t like black pepper stuff because it tends to be overpowering but this one was balanced.

Ambience: Beautiful space. Panoramic view of city. And the male customers are really, really good-looking. Find me a husband here!

Service could be a little curt. For fancy Chinese restaurants of this price range, the service could be improved. Usually customers don’t pour their own tea in fancy Chinese restaurants. It sounds spoilt, I know, but that’s the industry standard, not mine.

Not really sure what the cuisine is: Western with Asian influence? Had the Haricot Vert Salad with Salted Egg yolk (sounds more interesting than it tasted); red snapper; and a chocolate dessert. It was not memorable but also not offensive.

The service was bad. Asked for salt, server forgot. He expected us to pass him our glasses and plates. This is fine dining, it’s industry standards that customers shouldn’t serve themselves. And he kept rushing us, “The next course is coming out in 5 minutes. Are you done?” DUDE, I’m not your friend.

But the food was good although there were misses. I didn’t particularly like a cheese oyster dish because the cheese overpowered the oyster. They had a duck ngoh hiong kind of dish, which I liked but some didn’t. The steak was under-salted but when I added salt myself, it was fantastic, juicy. The lamb-and-cabernet sauvignon pairing was mindblowing.

Caviar-themed restaurant serving set courses. People here looked ultra rich. It’s one of the best restaurants I visited in 2022. But that was when the female head-chef was there. I heard they change a new chef and haven’t been there since.

It was a generic Italian restaurant. Between Bam! and Guccio, I prefer Bam because the food was very slightly more interesting.

In conclusion, I recommend 5 on 25 and Caviar. The other 3 are okay.
