EDIT: Tburu has closed down.
Calvin Yeung has more than a dozen of award-winning restaurants over Asia, and has opened Tburu on the 5th floor of Orchard Gateway@Emerald. The space is a dream: tall ceilings, and full glass panels to allow natural sunlight to enter, with jazz in the background.
Truffle kanpachi carpaacio ($22)
Tburu flies in whole fishes (not fillets) from Japan. Set lunches range from $18++ to $43++, and omakase at $100++ or $130++.

What was fantastic that day was the grilled items from bincho-tan, top quality Japanese charcoal. Both the iberico pork jaw from Spain ($18) and A4 Japanese wagyu from Gunma Japan ($22) were aromatic with smoke, although the wagyu was slightly over-cooked.

But the sushi could be improved. The problem lay in the rice: not hot, moist, vinegary, and fluffy enough. The aburi salmon was the best out of the lot, burnt beautifully to exude the taste of its fats.

Tburu is a perfect restaurant to bring your date. You have to take the lift to the 5th floor, which leads to an exclusive entrance–no other restaurants or shops here–and you enter a whole new different world of zen, calm, and peace.
