jamie-oliver-pancakes-recipeThe secret to good pancakes is fluffiness. Pancake mix is fine but it will never achieve the light texture. When you whisk egg whites, you introduce air into it. And that’s how you get fluffy pancakes. You just require 4 simple ingredients and a lot of wrist strength.

Serves 2

Ingredients

1 cup flour
1/2 cup milk
1 tsp baking powder
3 eggs


Method

1. Separate the egg yolks from whites. Mix yolks, flour, milk, and baking powder.

2. Add a pinch of salt to the egg whites. Whisk until stiff peak. Fold the whites into the mixture.

3. Cook batter until golden. Add whatever toppings, honey, butter, maple syrup, fruits, etc.
