a Japanese cuisine specialist, who usually points me toward the best omakase experiences, recommended me Enishi (International Plaza) as one of the best ramens in SG. Spoiler alert: it’s good. 

🪑 Only 9 seats in this restaurant. 

🧒🏽 their best seller, Japanese style Dan Dan noodles, is a likeable mix of chili oil (not unlike Lan Gan Ma) and (i guess….) bean paste? They are umami bombs that young people will like. 

💕 But between Dan Dan noodles and the dashi noodles, I prefer the latter. Because I have a killer Dan Dan recipe and I think I can replicate it. It’s not hard. But the dashi noodles, I don’t think I can. 

🍜 ingredients are okay but the magic of the dashi noodles is really in the broth. It’s not plain, as you would expect of dashi. There’s an underlying earthy kick that adds to the depth. 

🍊The yuzu peel in the broth is a nice touch.

✅ overall, very good. I think the dashi noodle might be my top 5 in Singapore.
