Oyster membrane, eggplant puree, scallop in Cambodian black pepper, only UNESCO black pepper in the world!

Oyster ice cream. It’s special in itself but what’s truly innovative is this course is a continuation of the previous course. The ice cream is supposed to interact with the previous dish of black pepper lingering on the tongue.

This is the best meal I’ve eaten in 2025 so far but unfortunately Mad About Sucre is closing in mid June. This is a very value-for-money meal: 13 courses from $83. It’s so fun to taste a variety of exquisite dishes.

What I think is so amazing is they dare to experiment with new stuff (oyster membrane?! Oyster ice cream?!).

And also what is really mindblowing is how they connect the 4th and 5th courses. The Cambodian black pepper in the 4th course lingers on the tongue so when you eat the 5th, the oyster ice cream really cools down the heat but also complements it. Amazing.
