⛲️ Suzuki Sushi Restaurant (Mondrian  Hotel, Duxton) is so fancy it has a zen garden bigger than my HDB. 

🍱 lunch starts from $160 and dinner from $250. We went for the $220 Tsuki lunch. 

👨‍🍳 Chef Suzuki-san is trained under Murata Yosihiro, one of the most famous chefs in Asia, known for bringing washoku to the world. 

🎋 Food is inspired by sugiaya, a traditional Japanese pattern (herringbone) found on kimono. 

🍲 in general, the food shows a strong sense of style. Some patrons may find it brash but we like it. 

🍲 for example, the first dish is a fish hotpot, fish barely scalded. It’s chewy with much sinew. While we find it delicious and unique, some people may prefer a “melt in your mouth” texture. 

🍤 The eel tempura is perfect, so delicate. 

🍣 the Shari (sushi rice) is (black) vinegary, sharp and wet. May fall apart. But I actually like vinegary, wet rice so this works for me. 

🍣 the fish on sushi complement the rice excellently. It’s the golden ratio. 

🌶️ there is a spicy piece of sushi! First time eating a spicy sushi. It’s really good. 

⭐️ overall, this is amazing educational journey for us. The food is fantastic, setting is amazing, and the service is impeccable.
