On the 7th floor of Park Hotel Alexandra, beside Ikea, The Carvery is a buffet restaurant that revolves around 3 to 4 roast meats daily by Chef Robert Chan with more than 20 years of experience.

The meats are only lightly seasoned so that the flavors of the meats speak for themselves, and so that guests can season the meats themselves with specialty fine salts (like Himalayan or black lava), housemade anchovy butter, housemade truffle butter, and an array of sauces.

Yorkshire pudding
Much of the rest of the buffet constitute side dishes for the meats. These sides are carefully considered as the pairing of the sides with the meats transforms the dish into a particular culture’s cuisine. For British, combine meat with Yorkshire pudding (or English you tiao, crispy and fluffy). The French is represented with Vichy carrots; German, pork knuckles and sauerkraut; Italian, polenta fries, and so on. My favorite side that night was crunchy green beans, strongly flavored with garlic. Not suitable for kissing lovers or vampires.


There are also salads; cold seafood like oysters, prawns, and mussels; hot dishes such as spicy seafood stew, tomato rice, lamb stew, and salmon. Breads are proofed overnight; wood-fired ovens churn out pizzas, and a hot station cook cooks pastas a la minute with very strong garlic aroma.

The food was OK, and well thought out, each dish worked well with other dishes. But the placement of food could be better. For instance, the truffle butter was placed with the roasted meats, while the breads and roasted garlic were placed at the other end, making it difficult for the guests to link the butter with bread, and to the garlic with the beef.

The buffet’s philosophy could be encapsulated by the dessert section: a small selection but varied and fine. The English trifle was irresistible: rich and light, sweet and tart, well balanced altogether.
